Little Champ

 Sometimes even a little tumble can cause a big hurt.

This is Chloe. She was playing in her Little Tikes Cozy Coupe and somehow getting out, she tumbled. Her siblings and neighborhood kids were all playing and went to help her when she ran to her mom shouting, “I broke my bone!”. One look and her mom knew this was bad.
Jamie cut away her shirt and put her arm into a sling. Off to Urgent Care. They took X-rays and sent her to CHOP (Children’s Hospital of Philadelphia).
 This is what a supracondylar break looks like.
The night before surgery, the doctor had to manipulate the bone back through the fascia because he was concerned it could have poked through the skin as she slept. (middle left photo above)
Now, with two pins, a bright pink cast and a little time, Chloe will be good as new.
While Jamie was caring for Chloe, Joelle and Jethro came to our house for a couple of days.
 Baby Joelle clung to Aunt Erin and shared all of her cold germs.
 And like all that went before her, Joelle loved splashing bubbles in the kitchen sink.
At the store Aunt Erin told us how excited Joelle got when they turned onto an isle and she saw a display of little dolls. Joelle told everyone that listened about her babies.
Jethro was my little shadow. We planted seeds together. He showed me that he is as tall as a yardstick. We watched movies and snuggled at bedtime.
(Did you know that if you thread a yardstick down through the cabinet drawer pulls you can prevent a curious mobile baby girl from opening each drawer and removing dangerous content. Yes, after 13 grandbabies, I learned this. It is not perfect but it will buy you some time.)

Shaela is our granddaughter who lives in upstate New York. This week was Shaela’s turn to be Super Kid in her class. Family can attend this 30 minute time to celebrate each Super Kid and share interesting or amusing stories or thoughts about why this Super Kid is special to them. Jet and I got to be part via FaceTime as did PopPop John from his work office and Shaela’s other grandparents who are currently in Hawaii.  Pretty amazing, I say.
and from the recent past…
When you are a mom to eight children it might take you almost a year to make good on your Father’s Day gift. Jamie and John finally got to enjoy their father/daughter evening together. Dinner and then home to watch a special episode of one of their favorite shows, Gold Rush. Remembering John Schnabel is a moving tribute of John by his grandson, Parker.
Back in February we had a visit from our New York family. Aunt Erin giving our grandson, Braden a haircut.
After this long week, John and I went to a restaurant we had been wanting to try. We were pleasantly surprised to learn it was Restaurant Week and the menu was a lovely 4-course meal, including, an appetizer, salad, entree and dessert sampler. We thoroughly enjoyed or time together.

Chicken Parmesan Birthday Dinner

A few days after our daughter celebrated her birthday by skydiving, we celebrated in a more down-to-earth way with a quiet family dinner of Chicken Parmesan over pasta and birthday ice-cream cake.(how-to recipe at bottom of this post)
I tried something a little different when breading the chicken.  Instead of the usual flour/egg/breadcrumbs procedure, I skipped the eggs, soaked the chicken in buttermilk, then into the flour, back into the milk then into the breadcrumbs.  Extra messy but the chicken was moist and tender!
If you don’t want to bother with the buttermilk, the standard breading is always good.


Chicken Parmesan 
Ingredients
2 cups buttermilk
8 boneless chicken breasts, pounded to 1/2-inch thick. If the chicken breasts are extra large, cut them in half before pounding.
1 cup all-purpose flour
3 1/2 cups fresh breadcrumbs (I  like to use 1/2 Italian breadcrumbs and 1/2 panko)
1/2+ grated Parmesan cheese (we like lots) 
vegetable oil for frying
Jar of your favorite marinara or sauce for topping the chicken and for serving over pasta
additional Parmesan cheese for topping and serving
Fresh basil
Directions
Preheat oven to 350
Add pounded chicken breasts to a bowl and cover with the buttermilk. Allow to marinate for several hours.
Place flour and breadcrumbs in separate shallow bowls.
Remove chicken from buttermilk and allow excess to drip off, coat with flour, shaking off excess. Dip back into the buttermilk and then into the breadcrumbs, pressing to get a good coating.
In a large cast-iron skillet or other heavy deep skillet, heat oil over medium to medium-high heat. 
Working in batches, add chicken to skillet; cook, gently shaking skillet occasionally, until chicken is browned, about 4 minutes. Turn; cook 2 to 3 minutes more (if browning too quickly, lower heat). Between batches, skim off brown crumbs from oil with a slotted spoon. Drain chicken in single layer on rack.
With chicken still on the baking rack, spoon marinara sauce onto each piece; top with grated Parmesan. Bake in oven just until chicken is warmed and the cheese is melted.
Serve with pasta, if desired.

And, because this girl doesn’t like traditional birthday cake, I made her an ice-cream cake.

Ice ~ Cream Cake
1 package Oreo Cookies
1/2 cup butter, melted
1 container vanilla ice cream, softened
1 container ice cream flavor of your choice, softened
1 container Cool Whip, thawed
Make crumbs from cookies in blender or with rolling pin. Combine crumbs and melted butter, reserving 1 cup of crumbs.Firmly press remaining crumbs over bottom and up sides of a 9 or 10-inch springform pan. Freeze until firm (15 minutes).
Remove from freezer and spread vanilla ice cream in an even layer. Sprinkle with reserved crumbs. Return to freezer until ice cream is firm.  
Spread second container of ice~cream. Cover top with foil and freeze, at least 4 hours or overnight. 
Remove the springform side band and place ice-cream cake onto a serving plate/cake safe with a lid.
Frost as desired with the whipped topping. Cover and freeze.
If you want to personalize the cake top, place about 1/4 cup melting chocolate in the microwave at power 30 for 30 second intervals, stirring each time until melted. Pour in to piping bag and decorate.
Return the ice-cream cake to freezer until ready to serve, allowing 10-15 minutes thawing time to make cutting easier.  Cake can be made and frozen up to two weeks ahead but be sure to wrap well with plastic wrap and cover with foil or cover to keep air out.

Here is a glimpse of some of the music playing at our house…

I peeked into Abbey’s room while she was working on an assignment for her digital animation class and found it very interesting to watch her progress.  Yes, she has two black lights and a blackboard bolted to the wall, black-out coverings on her windows and only about 3-feet of empty floor space in her bedroom with way too much stuff bursting out everywhere.  
 but, she loves what she’s doing!
Jared enthusiastically shows John each step completed as he creates a computer game.
 My favorite $3.00 bench purchased from a garage sale 25 years ago and painted and repaired dozens of times got to the point that John just couldn’t fix it and keep it fixed. Mostly it was the arms that took the brunt of the abuse but even the legs were not staying together any longer.

 We considered making a porch swing from the bench but I really wanted it back in the kitchen to hold all of those little grandchildren. So we sent it off to a furniture maker for a complete overhaul .
Please, please, little bench, stay strong!
We have been moving furniture, boxes and rearranging rooms as Erin and Jared return home. The nursery has become Jared’s room and the guest room is now Erin’s room. Making them feel loved and comfortable, and though sad about the circumstances, we love having them home.
The painting above Jared’s bed was something my sister gave me when she moved out of her house last fall.  I wish I had taken a photo of the before when it was in shades of bright green.  I knew when I saw it I would paint over the canvas. Wanting something masculine for this room, I went to work. Nothing artistic but it works to fill a big blank wall.
We’ve done lots of yard work and home repairs.
Weeding, planting, painting, edging, raking, digging, dividing, potting, sweeping, blowing, washing and, well, you know.  You are probably doing the same things at your house.
 Who would had thought removing 20-year old, dead boxwood bushes would be so hard! Eighteen in all.
 The last five with some much appreciated help from Jared.
Always the sentry, Raider keeps watch while we work.
Now, it hasn’t been all work.
My streptocarpus is blooming profusely in our bathroom.
Jared, the oldest grandson, and Keri, our oldest granddaughter, had a great time together. Last weekend we went to his high school spring musical, Mary Poppins. The following day, after getting those bushes out, Jared tried his best to hit Keri’s wild wiffle ball pitches (one that had to be rescued from the roof) and they had some impressive exercise challenges. As if push-ups aren’t hard enough, imagine doing hand clap push-ups! {The thought takes me back to the old broken bench feeling}
Our favorite time to visit Brigadier General William C. Doyle Memorial Cemetery is Memorial Day weekend when all of the graves are decorated with an American flag. Both my parents are interred here. A perfect place to find a bench, remember loved ones and the Veterans that gave their service for our freedom.
Haven’t had much time with the littles through all of these changes but John snapped this pic of Chloe sleeping soundly the last time she was over. Playing it tiring work!

catching up with family

Spring days ~ busy days!
April was filled with lots a family activities and get together’s!

 The son of our cousin, Caroline, was married in a lovely wedding.

As is so popular now, they had a photo booth situated in an obscure corner. All I can say is that my sister, John and I got some of the funniest pics ever!  So silly, that Carol made me promise never to share on any social media! Just imagine, John in the center with a crazy hat and over-sized glasses with basically the same expression in every photo and my sister and I making every goofy face we could possibly think of. Oh, my! Each time I look at the photos, I crack up all over again!

Then there was a christening for our cousin Karen’s grandson, baby Mark.
 Together again with Carol, her daughter, Christine, John and I. Later noticed the framed photo on Karen’s mantle. It is of our daughter, Erin when she was just three year old performing flower girl responsibilities in Karen’s wedding. Such sweet memories!
 There were random, every day moments too.  I caught this scene of, Erin, Jared and Abbey studying in the family room.  Erin is completing her master’s degree, Jared is a high school Junior and Abbey is studying digital animation.

Noah and I went to breakfast one morning and later we did some cooking together.

I even got a pic from Erin as she drove through center city the other day and saw the old Divine Lorraine Hotel. 

 We had a trip to The Pop Shoppe with the kids, celebrated our dear friend’s 91st birthday during Bible study and peeked in as the kids helped Aunt Abbey create a 5-little monkeys video for a class assignment.
Noah went to work with PopPop and learned about nuclear engineering. 
Jared was inducted into his schools Technology Society.

Cousins Camp ~ Part 2

~  DAY 3 ~
Sunday morning was spent at church with cousins Keri, Noah, Silas, Caleb, Cambrie, Chloe and baby Jet.
Afterward, the girls went with me to Aunt Erin’s Salon to learn some hair styling techniques. Ryan tagged along to hang out with his oldest cousin, Jared.

 Aunt Erin showed us great blow-drying and curling iron techniques, gave the girls goody bags and served amazing appetizers

Banana Oat Bars and Winter Days

I take lots of photos.  I keep the best and organize them into various file folders for easy retrieval should I want to find something in the future.  The others I delete.  Usually I keep up, but inevitably fall behind in this task each fall when I get extra busy with projects.
That’s what I have been working on these crazy weather days.  After the new year we had an eight-inch snowstorm.  A few days ago there were -30 wind-chills. Then is warmed up and all the snow melted. This morning is was freezing, icy rain that caused accidents everywhere and even a salt truck overturning.  Tomorrow it is going up to 60 degrees F.  
Like the random weather, I am sharing unrelated photos and throwing in a recipe that I spontaneously made when I saw the recipe posted on facebook.

 This adorable photo is of our youngest grandchild, Jethro.  His mama took the picture and I couldn’t resist sharing.  I didn’t make the hat – it was in a hand-me-down container of clothes he received.

 Icy precipitation covered these lilac branches yesterday.
So I didn’t expect to see this robin land on a branch as icy raindrops fell.  
Almost through a cord of wood already as we stay warm in frigid temperatures.  For the first time I had frost on the inside of my windows.  Noah and Silas bundled up and braved the chill long enough to build a dapper snowman
 Cambrie asked if she could make her favorite Silly faces as I snapped photos.
Our oldest grandson was nominated for Student of the month and his mom received a certificate for National Criminal Justice Honor Society from Saint Joseph’s University in Philadelphia

We worked very hard liquidating Aunt Marie’s sweet little Sears Kit house bungalow and readied to sell.

 I couldn’t share this patchwork quilt prior to Christmas because it was a surprise for our daughter, Jill who is providing foster care for a dear baby boy.  With the extra fabric I made the soft cube toy for him as well.
I didn’t know this photo was taken until I saw it on our churches website.  Baby Jethro in the glow of candlelight as we sang Silent Night on Christmas Eve. Abbey is in the foreground with Caleb, Chloe and Jamie in the background.
 And finally, no sooner did I see a recipe on my facebook feed, I went straightway to the kitchen and gave this Banana Oat Bar a try.  It caught my attention because it was suggested as an alternative to wrongful cravings (which I was having).  The original recipe contains no sugar, butter or eggs and since I had ripe bananas on the counter, I whipped it together and popped it into the toaster oven in little time.
The recipe wasn’t detailed so I wasn’t sure if it would bake up like a bar or be more like baked oatmeal.  I sprayed the dish prior to spreading the mixture and was happy that it came out easily and cut neatly. 
I can’t say that my sweet tooth didn’t think of spreading the bars with peanut butter and (heaven forbid) pipe some melted chocolate on top but I subdued that impulse and found them to taste, well, healthy.  They had a pleasant banana flavor, hint of sweetness from the raisins and a soft, chewy texture.  I got 12 4-inch x 1-inch bars and with my substitutions, I figured each to be about 70 calories.  A good, healthy alternative to curb a snack attack. If calories aren’t a concern, stirring in some mini chocolate chips and/or nuts would be a nice addition.
Banana Oat Bars
PRINT RECIPE
3 ripe bananas, mashed (I used 1 cup)
1/3 cup unsweetened applesauce (I used 1/2 cup since I didn’t have 3 bananas)
2 cups oats
1/4 cup almond milk (I used 2% milk)
1/2 cup raisins
1 tsp vanilla
1 tsp cinnamon
optional (I added 1 Tbs Splenda)
Preheat oven to 350 degrees
lightly spray an 8-inch square dish
In mixing bowl, Stir together all of the ingredients until well combined.  Pour into prepared dish and spread evenly.  Bake about 20 minutes.  Remove from oven and allow to cool.  Cut into bars.
Yield: 12 1-inch x 4-inch bars
