Honey Banana Whole Wheat Bread

Don't toss out those extra bananas over-ripening on the counter. Very ripe bananas are a great reason to bake a loaf of Honey Banana Whole Wheat Bread. Banana, honey and poppy seeds give this bread a light, fluffy texture.  Use a bread machine to make the dough then bake in a loaf pan or let the machine complete the whole process.
More times than I care to remember I found bananas on the counter ripening quicker than we can eat them. But that isn’t always a problem. Very ripe bananas is a great reason to bake a loaf of Honey Banana Whole Wheat Bread.

And what a lovely loaf it is. The banana adds to the wonderful light, fluffy texture of this bread. The honey and poppy seeds are a great addition to a new bread that will make a frequent appearances on our table.

Honey Banana Whole Wheat Bread

INGREDIENTS:
 
  • 2/3 cup warm water
  • 1 1/2 Tbsp. butter or vegetable oil
  • 1/4 cup honey
  • 1 egg
  • 1/2 tsp. vanilla
  • 1 1/2 cup whole wheat flour
  • 1 1/2 cup bread flour
  • 1 banana, sliced
  • 2 tsp. poppy seeds (optional)
  • 1 tsp. salt
  • 2 tsp. dry yeast

DIRECTIONS:

Add all ingredients to bread pan in order recommended for your bread machine*. Select the Basic/White cycle and press start.

Makes 2 lb loaf.

*  I almost never bake in my bread machine.  I set my machine for Basic Dough and wait for the cycle to complete.  After removing the dough from the machine, I shape it into a loaf or dinner rolls.  For this recipe I shaped it into a loaf and placed into a greased 9 x 5-inch loaf pan, sprayed the top with cooking spray, covered lightly with a clean towel, and allowed to sit in a warm place to rise a little over the top edge of the pan.  I baked the bread in a 350 degree oven for about 35 minutes.  Tent with foil toward the end of baking time if top of bread is getting too dark.

    This bread was so good. I switched up the flours and added some additional seeds and it was perfect. Just like you I started with the bread maker, then ended up going into the oven :).

    That sure does look good. A warm slice of that with a little butter on it would be perfect right now. I've always wanted to get a bread machine but then I figured I probably wouldn't use it enough to be worth it.
