Homemade Chocolate pudding

Easy homemade chocolate pudding is a classic dessert. Top with whipped cream and chocolate shavings. Made with kids while waiting for baby sisters arrival.
Looks like our newest grandbaby will be arriving a little sooner than planned. Momma had a doctor appointment and some testing so I watched the littlest ones who aren’t yet in school. It was a dreary, windy and rainy day but we made it brighter by making chocolate pudding together.

I pre-measured the ingredients so Chloe and Jethro could just dump and stir.
 
 
With my camera packed and ready to go with me to the hospital to capture the arrival of baby, I only had my iPhone for these photos.
 
 
 Super careful at the stove, it’s starting to look like pudding.
 
 
 
Heat off, Chloe carefully stirs in the butter and vanilla while MomMom makes sure she is safely away from getting burned.
 
 
 
The pudding went into the fridge to cool for dinnertime dessert and these two went to town cleaning the whisk.
 
 
 
Jethro is such a sweet boy.

Instead of the due-date St. Patrick’s Day birth and because of some medical concerns, the doctor is planning delivery for Monday, February 29th. Yes, that’s leap year.  So if it actually happens, this little one will be a Leapling, just like older sister, Chloe who is celebrating her birthday on the actual date this year.

Homemade Chocolate pudding

slightly adapted from Taste of Home
 
The recipe below is easily doubled which is what we did for this family of (almost) 10! Just use a really large pot.
 
PRINT RECIPE
 
6-8 servings
 
INGREDIENTS
  • 1 cup sugar
  • 1/2 cup baking cocoa
  • 1/4 cup cornstarch
  • 1/2 tsp salt
  • 1 Tbs. instant coffee granules (optional but it makes the chocolate so much more chocolaty)
  • 4 cups cold milk
  • 2 Tbs. butter
  • 2 tsp. vanilla
 
DIRECTIONS
In a heavy saucepan, combine the dry ingredients.  Gradually whisk in the cold milk.
 
On the stove, over medium heat, bring the mixture to a boil, stirring constantly to prevent burning on the bottom.  When mixture comes to a boil, stir and boil 2 minutes.
 
Remove from heat and stir in the butter and vanilla.  Pour into individual dishes or into one large bowl. To avoid a skin from forming on top, press plastic wrap directly onto surface; serve warm or refrigerate at least 2 hours. Garnish with whipped topping and shaved chocolate curls, if desired.
