Chocolate Chunk Banana Bread can be made in a regular size loaf pan as in the above photo or baked in 3 x 5-inch mini loaf pans as in the first photo of this post.
So let’s make Chocolate Chunk Banana Bread
In a bowl, combine the eggs and oil until blended.
Mash the bananas to measure 1 cup.
That’s about 3 bananas.
In a large bowl, add the mashed bananas, milk and egg mixture.
Stir to combine.
In another bowl, combine flour, sugar, baking powder and salt.
Whisk until the dry ingredients are well combined.
Pour the wet ingredients into the dry.
Gently fold until just moistened.
Stir in chocolate and nuts.
Pour into a greased 9 x 5 –inch loaf pan or three mini loaf pans.
Bake the loaf for 55 minutes or until toothpick inserted comes out clean. Cool the bread in pan 10 minutes before removing from pan to cool on a rack. If making mini loaves, bake for about 45 minutes

Makes 1 loaf
Prep time: 20 minutes
Baking time: 55 minutes
INGREDIENTS:
- 2 eggs, slightly beaten
- 1 cup mashed ripe bananas (about 3 medium)
- 1/3 cup veg oil
- ¼ cup milk
- 2 cups flour
- 1 cup sugar
- 2 tsp. baking powder
- ¼ tsp salt
- 4 oz. baker’s German’s sweet chocolate, coarsely chopped or chocolate chips
- ½ cup chopped nuts (optional)
DIRECTIONS:
Preheat oven to 350.
Stir together the eggs, bananas, oil and milk until well blended.
In another bowl, combine the flour, sugar, baking powder and salt, whisking until well combined.
Stir the wet ingredients into dry ingredients, gently folding just until moistened.
Stir in chocolate and nuts.
Pour batter into greased 9×5 –inch loaf pan.
Bake for 55 minutes or until toothpick inserted comes out clean.
Cool in pan 10 minutes.
Remove from pan to cool on rack.
Recipe Notes:
- For 3 3×5-inch mini pans, bake for about 45 minutes.
- Chocolate Chunk Banana Bread freezes well. After cooling completely, be sure to wrap well and store in freezer safe baggies. If desired, slice each loaf before freezing so that you can remove just want you want at a time.
