A scoop of minty ice cream sandwiched between the chocolate waffle is a perfect way to end a summer meal or to celebrate St. Patrick’s Day. Serve with coffee or a dessert wine for adults. Fancy it up with a swirl of chocolate syrup on the plate and a sprinkle of confectioners sugar on top for a lovely dessert.
These chocolate cake mix waffles aren’t going to be crispy like a regular waffle. Their texture is cake-y, and soft. But not so soft that you can’t hold them in your hand to eat.
Making cake mix waffles
This is all you need to make the waffles. Just the ingredients listed on the box of the cake mix.
Add the ingredients to a mixing bowl and beat with a hand mixer.
When your waffle maker is preheated, pour in the batter; close the lid and allow to cook 3-5 minutes. Carefully remove the waffles using a fork or tongs to a cooling rack.
Waffle makers vary slightly and it took a few times to get the quantity and timing just right. A quarter of a cup of batter wasn’t enough so I tried 1/3 of a cup. The waffles were still not full enough. As you can see here, a half-cup was too much the the next time I used a scant half cup for the perfect size waffles.
Bake time for my waffle maker was 3-4 minutes. I read that the waffles are done when the steam stops rising from the waffle maker, but I thought they were too crispy. Play a little with your maker until you get just what you like.
I didn’t keep track of the number of waffles the cake mix yielded but it was a lot. I’m guessing I got about 8 round waffles that I cut apart making two ice cream sandwiches from each round.
Some of the waffles were eaten right away by my daughter who stopped by on her lunch hour and my college-age grandson. Some of the waffles were filled with ice cream and then frozen for another time. The rest of the waffles were placed in freezer-safe bags that will be ready to fill or served toasted with whipped cream.
