Sweet little bundle bites, chocolate blueberry clusters are a super quick and easy to make dessert. The recipe uses just three ingredients and no baking!
Here is how to make chocolate blueberry clusters
Begin by placing mini foil/paper muffin cups or silicone cups on a dish or plate. Rinse the blueberries under cold water.
Spread the berries on a clean towel and allow to dry completely.
Add the chocolate to a medium microwave-safe bowl. Measure 1 1/2 tablespoons of shortening.
Add the shortening to the chocolate.
Why add shortening to to chocolate?
When melting chocolate for coating fruit like blueberries or strawberries, adding shortening to the chocolate prior to melting is often recommended. This is because the addition of shortening creates a smoother and more spreadable consistency than melted chocolate alone.
How much shortening to chocolate?
Add 1/2 teaspoon of shortening to each ounce of chocolate. Do not substitute butter or margarine for the shortening because they both contain water, which can cause the chocolate to seize or clump and ruin the melting process.
One more Note
It is very important to make sure your bowl and spoon are completely dry to prevent problems with the chocolate melting.
Microwave the chocolate and shortening, uncovered, on high power for 45-seconds. Stir well. The chocolate and shortening will begin melting.
Heat at additional 15-second intervals, stirring vigorously after each interval. I only needed a second time in the microwave and after stirring found the mixture melted and smooth.
Spoon a small amount of melted chocolate to cover the bottom of the cup.
Add the berries. The number of blueberries will vary depending on their size. About 5 if the berries are small and maybe 3 if the berries are big.
Spoon on additional chocolate. It isn’t necessary to completely cover the berries.
If desired, sprinkle on a little coconut or toasted almonds while the chocolate is still soft.
