Jell-O Strawberry Parfait

Looking for a dessert that is light and pretty and won’t harm your waistline? There are not too many of those kind of recipes around. I pulled this Jell-O strawberry parfait recipe from my  file archives and wondered why it got lost for so long. It is hard to believe a dessert this good won’t cause sweet treat regret.

It takes just three ingredients to make. Jell-O, whipped topping and strawberries. They go together to create a light and elegant dessert.

I make mine with sugar-free Jell-O and light whipped topping for a low calorie, sweet-tooth satisfying, no-guilt, anytime treat.

 

Elegant Jell-O Strawberry Parfait dessert

 
No wonder this Jell-O Strawberry Parfait recipe is at the top of the list of my most popular posts ever. It is so eye-catching served up in pretty stemmed glasses. It looks equally pretty in clear glasses without stems.
 
You might come up with a more clever way to prop the tilted glasses that creates the diagonal appearance. Loaf pans work for me.

Jell-O Strawberry Parfait Recipe

 

PRINT RECIPE

INGREDIENTS

  • 1 package (3oz) Jell-O brand gelatin, any flavor
  • 1 cup sliced fresh fruit plus extra for garnish
  • 1 cup thawed Cool Whip whipped topping plus additional for topping
  • mint leaved for garnish (optional)

DIRECTIONS

Prepare gelatin according to package directions. Chill until slightly thickened. Set aside 1/3 cup. Add fruit to remaining gelatin; spoon into 4 to 5 glasses. Chill glasses at an angle until Jell-O is set.

Meanwhile, fold whipped topping into measured (1/3 cup) gelatin. Spoon topping mixture into glasses of set Jell-O. Chill. Garnish with additional whipped topping a few slices, fresh strawberries and fresh mint leaves.
