Country Apple Coffee Cake

No mixer needed to make Country Apple Coffee Cake. Begin with a tube of refrigerated biscuits for an easy treat just right with coffee or a glass of milk.
No mixer needed to make this Country Apple Coffee Cake. It begins with a tube of refrigerated biscuits. I pulled out one of my oldest recipes remembering this yummy treat that is just right with coffee or a cold glass of milk.

Serve for breakfast, snack or dessert. You could add a dollop of whipped cream or ice-cream if serving for dessert but you don’t need it. Country Apple Coffee Cake is not overly sweet yet full of apple flavor.

Country Apple Coffee Cake

PRINT RECIPE

INGREDIENTS:

  • 1 tablespoon butter, melted and cooled
  • 2 cups chopped peeled, (if desired) apples
  • 1 (12-oz.) can Refrigerated Biscuits
  • 1/3 cup firmly packed brown sugar
  • 1/4 teaspoon cinnamon
  • 1/3 cup light corn syrup
  • 1 1/2 teaspoons orange juice
  • 1 egg
  • 1/2 cup pecan pieces

Glaze

  • 1 cup confectioners sugar
  • about 1 1/2 Tbs. orange juice
  • a few grains of salt

DIRECTIONS:

Heat oven to 350°F. Spray a 9-inch round cake/pie pan or 8-inch square pan. Spread 1 cup of the apples in sprayed pan.

Separate dough into individual biscuits. Cut each into quarters. Arrange biscuit pieces, points up, over apples. Top with remaining cup apples.
In small bowl, combine 1 tablespoon butter, brown sugar, cinnamon, corn syrup, orange juice and egg; stirring until smooth. Stir in pecans. Spoon over biscuit pieces and apples.
Bake at 350°F. for 35 to 45 minutes or until deep golden brown. Cool 5 minutes. If desired, remove from pan.
In small bowl, blend all glaze ingredients, adding enough orange juice for desired drizzling consistency. Drizzle over warm cake. Serve warm or cool. Store in refrigerator.
Servings:8 servings

RECIPE NOTES:

  • I did not peel the apples preferring to leave them on for added nutrition and color.
  • The original recipe called for a 10-oz can of biscuits. I don’t think you can find that size any longer.  I used Aldi brand and the can weighed 7.5-oz. so I used one and a half cans.  Next time I will use all of the second can.  You can purchase 12-oz cans which is just right for this recipe.
  • I  used my toaster oven to bake

    When I was 16 I visited Chicago with my family. The lady we stayed with gave us coffee cake every morning for breakfast and also I have visited USA many times since I have never found any as nice as that. So I will try this recipe and see if it matches it…it certainly looks like it should!
