Birthday Brunch with Baked Oatmeal Recipe

Counting my nine grandchildren, my sister’s four and my brother’s four, my mom has 17 great-grandchildren.
 
The other Great-grandchildren are:
Alexis & Olivia and Mandy & Amy
Julianna, Maxwell, Harrison and Vivienne
My mom has thirteen grandchildren.
(she calls them her baker’s dozen)
 
 
A cupcake tower to celebrate a St Patrick’s Day Birthday!
 
 
 
 I send prepared meals to my mom and often what she requests for breakfast is…
 

Baked Oatmeal

Here is the easy recipe from Allrecipes.com

PRINT RECIPE
 
Makes 8 3/4-cup servings

Ingredients

  • 3 cups rolled oats
  • 1 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 2 eggs
  • 1/2 cup melted butter
  • 2 teaspoons vanilla extract
  • 3/4 cup dried cranberries or raisins
 

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, mix together oats, brown sugar, cinnamon, baking powder, and salt. Beat in milk, eggs, melted butter, and vanilla extract. Stir in dried cranberries. Spread into a 9×13 inch baking dish.
  3. Bake in preheated oven for 40 minutes.
NOTE: to make individual servings, fill 3/4-cup capacity ramekins or custard cups and bake 30 minutes
 Always good to get together!

    Thanks for linking this in our Mom-Friendly Recipes Breakfast category! My son LOVES oatmeal! I think the baby may be a little sensitive to it so I may not be able to try it for a while but I may have to make it for my son anyway!

    What a wonderful birthday your mom had. I love french toast casserole but never tried baked oatmeal.

    YUMMMM, baked oatmeal! That sounds delicious…I love oatmeal and have it every morning for breakfast so I might have to try that out 🙂
    How sweet the photos are of all the grand children and your mom. I'm certain she had the time of her life and about those cupcakes; ummm, those look good as well. I wonder if I'm hungry 🙂
