This apple pear crisp is one of those timeless recipes you’ll find yourself returning to again and again. It’s simple, satisfying, and adaptable with seasonal fruit. Whether you’re baking for guests, prepping a cozy weeknight dessert, or using up fruit on the counter, this crisp delivers every time.

A Dessert That Feels Like Home

Swap the pears for 1½ cups of fresh or frozen blueberries, and you’ll have a lovely variation: Apple Blueberry Crisp. The burst of color and slight tang from the berries adds another layer of charm.

This flexibility means you can enjoy this crisp year-round, using pears in the fall, and blueberries in the spring or summer. Either way, it’s a winner.

What Makes a Crisp So Special?

Crisps are often confused with cobblers or crumbles, but the difference lies in the topping. A crisp typically includes oats in the topping, creating a beautifully textured layer that becomes golden and, well… crisp. Combined with brown sugar and butter, it offers just the right amount of sweetness and crunch.

Helpful Tips for the Best Crisp

  • Don’t skip the cinnamon. It brings out the natural sweetness of the fruit and adds cozy depth.

  • Use cold butter, not softened or melted. Cut it into the dry ingredients using a pastry blender, fork, or your fingers. This keeps the topping crumbly and crisp as it bakes.

  • Let the crisp cool slightly before serving. This allows the juices to settle and the topping to firm up properly.

  • Serve warm with ice cream, whipped cream, or a spoonful of vanilla yogurt for a lovely contrast.

Make-Ahead & Storage

You can assemble this crisp a few hours ahead of time and keep it in the refrigerator until ready to bake. Leftovers store well, too. Just cover and refrigerate. Reheat gently in the oven to restore the crisp topping.

Apple Pear (or Blueberry) Crisp

Equipment

  • Preheat the oven to 350 degrees F.
  • 9 by 12 by 2-inch oval baking dish

Ingredients
  

For the crisp

  • 2 pounds ripe Bosc pears About 4 pears or substitute 1 pint blueberries for the pears
  • 2 pounds firm Macoun apples About 6 apples
  • 1 teaspoon grated orange zest
  • 1 teaspoon grated lemon zest
  • 2 tablespoons freshly squeezed orange juice
  • 2 tablespoons freshly squeezed lemon juice
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

For the topping:

  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar lightly packed
  • 1/2 teaspoon kosher salt
  • 1 cup old-fashioned oatmeal
  • 1/2 pound 2 sticks cold unsalted butter, diced

Instructions
 

For the crisp

  • Peel, core, and cut the apples into large chunks. Place the apples and pears in a large bowl and add the zests, juices, sugar, flour, cinnamon, and nutmeg. Pour into a 9 by 12 by 2-inch oval baking dish.

For the topping:

  • Combine the flour, sugars, salt, oatmeal, and butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed for 1 minute, until the mixture is in large crumbles. Sprinkle evenly over the fruit, covering the fruit completely.
  • Bake for 50 minutes to 1 hour, until the top is brown and the fruit is bubbly. Serve warm with ice-cream.

    I made this last week using all 3 fruits. I had planned on making a pear and apple crisp, but since I had leftover blueberries I just used less pears and apples. I did use a deep rectangle baking dish similar to yours. Came out delicious! This recipe is a keeper I’ll use again and again. Thank you!
