How to make bacon tomato jam
Here are the ingredients readied for the recipe.
Finely chop the vine ripened tomatoes.
Finely chop a small onion.
Add the bacon to a skillet.
Partially cook bacon in pan.
Add the onions to the pan.
Continue cooking until onions are softened and bacon crisp.
Drain any fat from pan. (I tilted the pan and blotted with a napkin)
Add tomatoes to the pan.
Stir in the sugars, salt, pepper, red pepper flakes, allspice and lime juice.
Bring to a boil; reduce heat and simmer, uncovered, until very thick and all liquid is absorbed, about 45-60 minutes.

INGREDIENTS
- 1/4 lb smoked bacon

- 1 lb. vine ripened tomatoes, finely chopped
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes (more or less to suit your taste)
- 1/8 tsp allspice
- juice of 1 lime
DIRECTIONS
Partially cook bacon in pan; add onions and continue cooking until onions are softened and bacon crisp. Drain any fat from pan. (I tilted the pan and blotted with a napkin)
Add tomatoes, sugars, salt, pepper, red pepper flakes, allspice and lime juice.
Bring to a boil; reduce heat and simmer, uncovered, until very thick and all liquid is absorbed, about 45-60 minutes.
Serve as a condiment for burgers or grilled cheese
Yield: I got three small canning jars, about 1 cup total. Keep refrigerated and use within a few days. Freeze extra for longer storage.
I like to serve warm by microwaving for a few seconds before spreading on bun but you can serve cold or at room temp.
