Muffins are just so quick and easy to make and a great kitchen activity with kids. Take advantage of whatever berry is currently in season and let the kids stir them into the muffin batter.
The orange glaze on these muffins is really good but you can skip it if you prefer. Serve the muffins plain or sprinkle a little cinnamon sugar on the top just before baking.

Here’s how to make raspberry muffins
Raspberry Muffins
- 2 cups all Purpose flour
- 1/2 cup sugar
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1 tsp. grated orange or lemon peel
3/4 cup milk - 1/3 cup oil
- 1 egg, beaten
- 1 cup (or more if you like) berries (raspberries, blueberries, blackberries, strawberries or combination)
- optional: cinnamon sugar for sprinkling on top Optional: Orange Glaze Frosting (recipe below)
- 3/4 cup confectioners’ sugar
- tiny pinch salt (optional)
- 1/4- 1/2 tsp. orange zest
- 1-2 tsp. orange juice
