Raspberry Muffins

Easy recipe for classic muffin with your favorite berry. These very berry muffins are filled with raspberries with an orange glaze frosting.We love berries and we love muffins. We love them for breakfast, mid-morning or afternoon snack, with a cold glass of milk or with a hot cup of coffee. These very berry raspberry muffins are so good but they can also be made with any berry you like!

Easy recipe for classic muffin with your favorite berry. These very berry muffins are filled with raspberries with an orange glaze frosting.

Muffins are just so quick and easy to make and a great kitchen activity with kids. Take advantage of whatever berry is currently in season and let the kids stir them into the muffin batter.

The orange glaze on these muffins is really good but you can skip it if you prefer. Serve the muffins plain or sprinkle a little cinnamon sugar on the top just before baking.

 

Freezing raspberry muffing

And, don’t forget, you can place any extra muffins in freezer bags or air-tight containers for no-hassle, quick and convenient homemade muffins whenever you are in the mood! Muffins can be stored frozen for up to 3 months. Thaw them completely at room temperature, or heat frozen muffins in the microwave or conventional oven for a few seconds.
 

Here’s how to make raspberry muffins

 
Heat oven to 400. Grease bottom only of 12 muffin cups or line with paper baking cups.

In medium bowl, combine 2 cups flour, 1/2 cup sugar, 3 teaspoons baking powder, 1/2 teaspoon salt and lemon (or orange) peel; whisk well. Set aside.
 
 
 
In another bowl, combine 3/4 cups milk, 1/3 cup oil and 1 beaten egg.

Add the wet mixture to the dry ingredients all at once.
 
 
Stir just until moistened.

Add the raspberries (or berries of choice).
 
 
 
 
Gently fold in berries being careful not to over mix.

With a scoop or spoon, fill the cups 2/3 full.

If desired, sprinkle a bit of cinnamon sugar on the muffins just before baking.

Bake at 400 degrees for 20 to 25 minutes or until light golden brown. Cool 1 minute before removing from pan.

  • 1 tsp. grated orange or lemon peel
    3/4 cup milk

  • 1 cup (or more if you like) berries (raspberries, blueberries, blackberries, strawberries or combination)

Orange Glaze Frosting

INGREDIENTS
  • 3/4 cup confectioners’ sugar
  • tiny pinch salt (optional)
  • 1/4- 1/2 tsp. orange zest
  • 1-2 tsp. orange juice 
 
DIRECTIONS
 
 
In small bowl, combine glaze/frosting ingredients until smooth. Spread or drizzle on tops of slightly cooled muffins.
