Strawberry Pie

By Lorraine

I got this recipe for strawberry pie many years ago from someone who is not only a very dear friend but someone who also shares my birthday! I don’t think she reads my blog, but I love her lots! This pie is so good! The note I wrote on my stained recipe card is… The BEST!

How to make strawberry pie

Slice strawberries and pre-bake pie shell.

After cooking the Jell-O filling, pour over strawberries.

PRINT RECIPE

INGREDIENTS
  • 3 Tablespoons cornstarch
  • 1 1/2 cups sugar (It is a SWEET dessert, you might want to reduce the sugar.  We like it sweet)
  • 1 1/2 cups water
  • 3 oz box strawberry Jell-O
  • 2 cups sliced strawberries
  • Pre-baked 10″ pie shell, cooled
  • whipped cream

DIRECTIONS
Line bottom of the baked and cooled pie crust with the sliced strawberries.

Combine cornstarch, sugar and water in small saucepan.  Bring to a boil and simmer, stirring constantly, until thickened.  Add the Jell-O and stir until dissolved.  Pour over the strawberries and refrigerate until set.

Serve with lots of whipped cream.

I did not see any reply’s to questions so I’m not sure if you check this or just email response but how long does it take to set and how many days is it good for? I need one for tomorrow and one for Sunday and I was wondering if I can make them today

      Hello Carrie,

The strawberry pie thickens right away and sets as it cools. I think the pie is best the day it is made. It would probably be good made one day ahead but I think the crust would become soggy longer than that.

      Hope this is helpful.
      Kindly, Lorraine

CAN I USE FROZEN WHOLE STRAWBERRIES INSTEAD OF FRESH.

      Hello Monica,

I have only made this strawberry pie with fresh strawberries. I would be concerned that the thawed, frozen strawberries would contain too much moisture for the pie to set up correctly. If you do make the pie using frozen berries, let me know how it turns out. Thank you! Lorraine

    Hi,
I want to make this pie, but I need help…
    I live in Portugal, so I don't have Jell-O.
I have another brand of Jello but to make it I don't had sugar. To make the Jell-O you have to add sugar?
To make my Jello I use 500 ml of water (+- 17 oz). Is it the same for Jell-O?
    Thank you…
