Skip the frying but still have juicy, tender and crispy chicken breasts. After baking, drizzle with honey mustard sauce for a really tasty meal.
Make the Honey Mustard Sauce
In a small bowl, combine the mayonnaise, honey, and Dijon mustard.
Stir until smooth.
Set aside 4 tablespoons for preparing the chicken and reserve the rest for serving.
Parmesan/panko topping
In a medium-sized bowl, combine the panko breadcrumbs, Parmesan cheese, onion powder, garlic powder and paprika.
Stir to combine.
Add 5 tablespoons olive oil and stir again.
Preparing the chicken
Begin by pounding the chicken. With the flat side of a mallet or a rolling pin, pound the chicken to a thickness of 1/2-inch.
Pat the chicken dry with paper towels and place on a lightly sprayed baking pan. Spread the top of each chicken breast with a layer of the honey mustard sauce.
Mound each chicken breast with the Parmesan/panko mixture, pressing firmly to adhere. Bake the chicken 15-20 minutes or just until cooked through.
Use the reserved honey mustard sauce to drizzle on the chicken when serving.
