Minty Cream Cheese Frosted Cupcakes

It is not too late to make a quick dessert for St. Patrick's Day. Grab your favorite packaged cake mix and bake a batch of Minty Cream Cheese Frosted Cupcakes. While they are cooling mix up some really yummy frosting tinted green with a hint of mint. A few sprinkles and Voilà!

It is not too late to make a quick dessert for St. Patrick's Day. Grab your favorite packaged cake mix and bake a batch of Minty Cream Cheese Frosted Cupcakes. While they are cooling mix up some really yummy frosting tinted green with a hint of mint. A few sprinkles and Voilà!
After baking and cooling your cupcakes, pipe on swirls of frosting or slice the tops off and spread frosting before replacing the tops for a slightly different look.

Pipe swirls of frosting onto each cupcake. If you color half of the frosting and leave the other half white, you can create this two-toned effect. Spoon the tinted frosting down one side of the piping bag and the un-tinted frosting down the other side.  As the frosting comes from the tip, there will be a soft swirl of color.

Minty Cream Cheese Frosting

PRINT RECIPE
makes enough to frost 24 cupcakes or 1 cake

INGREDIENTS

  • 8-oz cream cheese, softened
  • 8-oz butter, softened
  • 4 cups confectioners sugar
  • 1/2 tsp mint extract (add more if you like)
  • pinch of salt
  • Sprinkles (optional)

 

DIRECTIONS
In electric mixer bowl, beat together the cream cheese and butter until well creamed and fluffy.  Beat in the mint extract and salt. Turn mixer to low speed, beat in the confectioners sugar, a cup at a time, until smooth and creamy.

If desired, color frosting using food coloring or paste.  In the cupcakes shown here, I colored half of the frosting and added both the white and green to the piping bag to create a swirled effect.

    Happy Friday. These are so cute for St. Patrick's! I know our little neighbor girl would love one of these. She almost always has a chocolate mustache!

    I am new to your blog. I am enjoying getting to know you through your posts and reading old posts. I found one today about the adoption of the little boy by your daughter and son-in-law. Our family started fostering a little girl 2 years ago and six months later she was ours. It was a quick adoption because the parental rights had already been terminated. Her capacity to love is amazing and to have her call me mom is so humbling. When she landed here she had already been in six different places. God is good and puts the solitary in families.
