Strawberry Jell-O Parfait
Another lovely low-calorie dessert is Strawberry Jello Parfait. It is brimming with sliced fresh strawberries and topped off with light whipped cream! So pretty served in tall, stemmed glasses and garnished with more fruit and a sprig of mint.
Weight goal
I often use a kitchen scale to be sure portion size is within range. I eat breakfast, lunch, dinner and usually a mid-morning or mid-afternoon snack. And one thing I always do is to have something sweet after dinner each evening. The trick is just one bite of something wonderful!

Dieting Desserts
INGREDIENTS
- Small package Sugar-Free Jell-O (flavor of your choice) {Calories per serving size: 5}
- 1 1/2 cups chopped strawberries {Calories per serving about 20}
- Whipped light cream (that heavenly stuff in a can) {Calories per serving size 2 Tablespoons: 15}
Total 40 calories per serving
DIRECTIONS
Basic Directions for 3-ounce package
Stir 1 cup boiling water into gelatin in medium bowl at least 2 minutes until completely set.
Stir in 1 cup cold water. Refrigerate 4 hours or until firm.
To Add Fruit
Refrigerate gelatin 1-1/2 hours or until thickened. Stir in 3/4 to 1-1/2 cups chopped fruit. Refrigerate 4 hours or until firm. (If using canned fruit make sure it is well drained. Don’t use any acidic fruit such as fresh pineapple or kiwis.)
To Unmold Gelatin
I like to make Jell-O in individual 1/2-cup custard cups. If you want to make it in a mold, follow the directions below to unmold.
- Gently loosen gelatin from sides of mold.
- Dip mold in warm water for about 15 seconds.
- Remove mold from water and shake.
- Place moistened serving plate over mold.
- Invert and gently shake to remove gelatin.
- Remove mold and center gelatin on plate.

Your desserts look wonderful. It is always hard to entertain when you are trying to lose weight, but these are pretty enough to set on any company dinner party table. Well you know that I am working on losing some weight also and these both look very good.
I've been mainly keeping an eye on fat grams. I don't really count calories but I know I'm not going over board with them

Lovely desserts, and while I am trying to avoid sugar and artificial sweeteners, I wonder if I can make my own gelatin using unflavored and add flavorings. A new mission to start. I need to learn better portion control. ;-( xo

Looks yumy. I've lost thirteen pounds this year and can see my goal of twenty pounds lost in sight. Fruits and veggies make the difference to me, too. I do like a sweet snack, though, and these look good.

This seems like a great idea. I really need to lose some weight and I too love my sweets so I think I will try this idea. I'm not sure our jelly is made the same as yours but we do have ready made jelly deserts in our supermarkets so I will buy some in and try them out. Thanks for sharing

Jello always reminds me of my times as a kid, probably because we had so many types of jello desserts back in the day. Love jello especially during the summer, so refreshing.
My strategy for keeping my weight down is small frequent meals (6), lots of veg and fruit, and portion size…and I, like you don't deprive my self when it comes to dessert but I usually only take a couple of bites

Great post today, Lorraine. That is what I have been eating for a "treat"…sugar free jello. The other day I also popped a dollop of vanilla greek yogurt on it instead of the whipped cream and it was delicious. However, my own is not nearly as pretty as yours. Well, your pictures are good enough to eat and the good thing, no calories… I keep saying your photography is outstanding…yes, I sound like a broken record but its true.
Maybe you could do a blog post of where you set up for your photos, love the background. You need to be a food photographer for a some of those food magazines.
