Many know the health benefits of oatmeal in a nutritious diet. You are probably familiar with simmering the oats in a pot of water or using the instant oatmeal packets. But, did you know you can make a lovely dish of baked oatmeal? It is delicious! And, so easy too!

We grew up with and still enjoy a bowl of old-fashioned oatmeal with a sprinkle of brown sugar, a drizzle of cream and a handful of blueberries tossed in.
But, baked oatmeal… it takes those oats to a whole new level.
Just toss together the ingredients, dump into a baking dish and bake. Make the coffee, pour the orange juice, set the table and and you’re ready to pull the dish from the oven.
Serve with a drizzle of maple syrup, milk or cream. The recipe gives you an option to add raisins but if you didn’t, you might like it topped with bananas, sliced strawberries or blueberries. Crumble some over a bowl of yogurt. It is delicious for breakfast, brunch or snacking.
How to make baked oatmeal
In this recipe, I have substituted half of the butter with unsweetened applesauce. But feel free to increase the butter to 1/2 cup and exclude the applesauce. I do not see a difference in flavor or texture using the applesauce but it does reduce the fat and calorie content.
In a large bowl, mix together oats, brown sugar, cinnamon, baking powder, and salt.
Give a quick stir so everything is evenly combined.
In a small bowl, lightly beat the 2 eggs.
Add the beaten eggs, milk, melted butter, and vanilla extract.
Stir the mixture together and add the dried cranberries or raisins, if using. I find that the dried fruit can get a little too dry when baked with the oatmeal. Not a problem but you might want to consider just tossing raisins or dried cranberries in when serving. It is just a matter of preference.
Spread the oat mixture into a deep dish pie plate or a 7 x 11 inch baking dish.
Bake in preheated oven for 30-40 minutes. Keep in mind that the larger the pan, the shallower the oatmeal mixture and it will bake quicker. Adjust baking time accordingly.

Baked Oatmeal

Makes 8 3/4-cup servings
INGREDIENTS
- 3 cups rolled oats (the Old-fashioned oats, not instant or quick cooking)
- 1 cup brown sugar
- 2 teaspoons ground cinnamon
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup milk
- 2 eggs, lightly beaten
- 1/4 cup melted butter
- 1/4 cup unsweetened applesauce
- 2 teaspoons vanilla extract
- 3/4 cup dried cranberries or raisins (optional)
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, mix together oats, brown sugar, cinnamon, baking powder, and salt.
Beat in milk, eggs, melted butter, unsweetened applesauce, and vanilla extract.
Stir in dried cranberries or raisins, if using.
Spread oat mixture into a deep dish pie plate or a 7 x 11 inch baking dish.
Bake in preheated oven for 30-40 minutes.
NOTE: to make individual servings, fill 3/4-cup capacity ramekins or custard cups and bake 30 minutes. Bake for less time if using smaller containers.

Individual serving of baked oatmeal
If you prefer to serve the oatmeal in individual portions, perhaps for a lovely breakfast or brunch, spoon the mixture into ramekins or custard cups. You will need to adjust the baking time. Depending on the size of your cups (probably 1/2 cup size) I would bake about 20-30 minutes.
Baked Oatmeal for dessert
haha… if your guy has a sweet tooth, you’ll probably get this. While photographing the oatmeal for this post, my husband, who is currently working remotely, popped his head in and offered his opinion. He thought the oatmeal would make a great dessert with a scoop (or two) of vanilla ice cream. Yup. He is right. I think you can guess what happened to this plate right after I was finished photographing 😉
