Looking for something different than potatoes or rice as a side for your chicken, pork or beef entrée. Swiss Parsleyed Noodles is an easy side dish made extra special and flavorful with Swiss and Parmesan cheese and topped with crunchy buttered breadcrumbs.
Serving up a bowl full works as an entrée for me and you can stir in some cooked chicken chunks before baking if you like. But mostly I like to make it along side a meat dish. Add a green vegetable for a complete meal.
How to make Swiss Parsleyed Noodles
Cook the egg noodles following the package directions.
While the noodles are boiling, chop the fresh parsley.
Grate the Parmesan and shred the Swiss cheese.
Saute the chopped onions in butter then stir in the flour, salt and pepper.
Add the milk and water; cook over medium heat. Stir in the cheeses.
Toss in the parsley and spoon mixture into a casserole dish.
Sprinkle the buttered breadcrumbs over the top and bake.
So yummy!
SWISS PARSLEYED NOODLES
INGREDIENTS:
- 3/4 c. chopped onion
- 2 tbsp. butter
- 1 tbsp. flour
- 1/2 tsp. salt
- 1/4 tsp. white pepper
- 1 1/3 c. undiluted evaporated milk
- 2/3 c. water
- 1 c. (4 oz.) shredded Swiss cheese
- 3 tbsp. grated Parmesan cheese
- 1/4 c. chopped parsley
- 4 c. (8 oz. dry) cooked and drained wide noodles
- 1/4 c. buttered bread crumbs
DIRECTIONS:
Preheat oven to 325 degrees.
Sauté onion in butter in large saucepan.
Stir in the flour, salt, and pepper.
Gradually add evaporated milk and water.
Cook over medium heat, stirring constantly, until mixture just comes to a boil.
Remove from heat. Stir in cheeses and parsley. Carefully stir in noodles.
Spoon into a 1-1/2-quart casserole dish. Sprinkle bread crumbs over top.
Bake in a slow oven (325 degrees F) 20 to 25 minutes, or until bubbly and heated through.
How to make Buttered Breadcrumbs
INGREDIENTS:
- 1 tablespoon butter
- 1⁄2 cup soft breadcrumbs, posted separately
DIRECTIONS
Melt butter in a microwave or small skillet over medium low heat.
Combine with breadcrumbs and toss until the crumbs are evenly coated with the butter. The breadcrumbs will toast while the casserole bakes.
If you are planning to use the buttered crumbs on vegetables, soup, or salad, you can toast them on the stovetop before using them to top the dish. To toast the soft buttered bread crumbs, put them in a nonstick pan over medium heat on the stovetop. Cook, stirring constantly until browned and somewhat crisp. Now they are ready to top any dish and will retain their crunch longer than plain dry breadcrumbs.
