Do you love the flavor combo of chocolate and mint? Do you like cheesecake? Chocolate minty cheesecake parfait has all the complimentary flavors and it is an easy, no-bake recipe. The dessert is pretty, tasty, festive and a perfect St. Patrick’s Day or Christmas dessert.

You can adjust the serving size to whatever you want. For smaller portions, I used these vintage 4-ounce Boopie juice glasses I’ve had for ages. If you want the layers to show, use a glass or cup that is clear.
Here is the easy recipe for making chocolate mint cheesecake parfait
Begin by crushing the cookies into crumbs. You can do this by placing the cookies into a zipper bag and crushing them with a rolling pin or the side of a meat mallet. If you have one, it is way faster and less messy to use a food processor.
Allow the cream cheese to come to room temperature so it creams well.
Add the cream cheese and 3 tablespoons of sugar to a large mixing bowl.
Beat together on medium-high speed until smooth and creamy.
Add 1/2 teaspoon vanilla and 1/8 teaspoon peppermint extract and mix until well combined.
Add the tub of thawed whipped topping to the bowl.
Fold in until combined.
At this point you can add the crushed cookie crumbs to the cream cheese mixture, fold to combine and spoon into dessert dishes. Top with a dollop of whipped cream and serve. Or you can add just some of the cookie crumbs to the cream cheese mixture and layer with the remaining crumbs. Or you can layer just the cream cheese mixture with the cookie crumbs. It is up to you and it is all good 🙂
Making the layers for the chocolate mint cheesecake parfait
Spoon cookie crumbs into the bottom of your serving glass.
Add the cream cheese filling into a decorator, pastry bag or large zip top bag. Snip enough of the end off the bag to allow you pipe the mixture into your desired serving glasses.
Alternated layers of cookies and cream cheese mixture with the crushed cookies.
Garnish with additional whipped topping and sprinkle on a few jimmies or sprinkles.

Chocolate Mint Cheesecake Parfait
Slightly adapted from My Baking Addiction
Makes 8-10 servings depending on serving dish
INGREDIENTS
- 1 (8 ounce) package cream cheese, softened
- 3 tablespoons granulated sugar
- 1/2 teaspoon pure vanilla extract
- 1/8 teaspoon peppermint extract
- 1 (8 ounce) tub frozen whipped topping, thawed
- 12 crushed Oreo Cookies

Add the cream cheese and 3 tablespoons sugar to a large mixing bowl.
