A cookie crust is easier to make than a regular pie crust. It is quick and it requires just three ingredients. Cookie crust is delicious with cream pies such as cheesecake, chocolate pie, lemon meringue pie, banana cream pie, peanut butter pie or ice cream pie.
And, a cookie crust can be made using various cookie flavors. Any crispy cookie will work creating a totally original dessert. Doesn’t a lemon shortbread crust sound good with a cheesecake!
So here is the how-to for making your own cookie crust…
Crushing the cookie crumbs
I like to use a food processor to grind the cookies.
If you don’t have a food processor, put the cookies in a zip-top bag and crush them with a rolling pin until finely crushed.
Depending on the cookie used, 3 cups of animal cookies ground to 1 1/2-cups of crumbs.
Once the cookies are ground, add the butter and sugar. I did not add sugar to the mixture to this crust, instead experimenting to see if the crust would be significantly sweet enough for the pie I was making. It was. So it is your preference as to the sweetness desired.
Stir the butter, sugar and crumbs together until evenly combined.
Dump the mixture into your pie dish.
Press evenly into dish.
Using the back of a measuring cup can be helpful pressing the crumbs or simply use your fingers.
Baking your cookie crust
I bake this cookie crust for 7 minutes. Some recipes suggest no baking at all is needed like when making an ice-cream cake. Other recipes suggest baking for 15 minutes to toast the crumbs. Again, it is up to you 🙂
Cool cookie crust on a rack before adding your filling.

Chocolate Cookie Crumb Crust
9-inch deep dish pie. If filling standard 9-inch pie pan, you can make a thicker crust or use the extra to sprinkle on top of the finished pie
INGREDIENTS
- 1 1/2 cups finely crushed cookies
- 1/3 cup sugar (use less if desired)
- 6 tablespoons butter, melted
DIRECTIONS
Preheat oven to 375 degrees F
In a medium bowl combine the cookie crumbs, sugar, and butter.
Mix until well blended.
Press the mixture into an ungreased 9 inch pie plate or springform pan.
Bake in the preheated 375 degree oven for 5-7 minutes.
Remove from oven and cool on a rack before finishing with filling of your choice.
Cookie crust variations
Make a crust with your favorite cookie! You may substitute vanilla wafers, animal cookies, sugar cookies, gingersnaps, peanut butter cookies, tea biscuits, butter cookies, digestive biscuits or shortbread.
NOTE:
- Graham cracker crumbs soak up a lot more butter than other cookie crumbs, so you’ll need to use an extra 2 tablespoons of butter.
- You can use Oreo’s cookies with or without the cream center removed.
