Hashed Browns
Slightly adapted from Ina Garten
INGREDIENTS
- 5 tablespoons unsalted butter
- 1 1/2 pounds boiling potatoes, 1/2-inch diced (peeled or unpeeled)
- 1 1/2 cups chopped yellow onions (2 onions)
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 2 tablespoons minced fresh parsley
- 2 tablespoons minced chives
DIRECTIONS
Recipe notes:
- If your skillet is a bit small and the potatoes are deep, it may take a little longer to get them to tender. Adjust time slightly.
- The darkness is a preference. We like our hashed browns a little darker so I notch up the temp toward the end of the cooking time. Keep a close watch so they don’t get too browned.

I love all of Ina's recipes. And I've actually made this one before and yes, it is so good. Ina used to have a store in East Hampton and I had the opportunity to visit it. She had a display case with so many of her foods that you could purchase. Most of the items are now recipes in her cookbooks.

Oh, yum! I have only ever had hash browns from a restaurant before (I know- horrible). I don't know why, as they seem really easy to make. I like the addition of scallions in this recipe- I'm sure it adds a little something special.

I have never seen this recipe for hash browns..and MY John loves them too. He likes his "crispy" though so I would have to brown them heavily. They look great- xo Diaan

We have breakfast for dinner quite often. That's one of my favorite meals, I can eat breakfast food any time of day.

My family also enjoyed breakfast for dinner occasionally. When we were kids, there was a restaurant in Atlanta (about 30 min. away) that specialized in hash browns and they were such a treat. Thanks for sharing this yummy recipe!
