The more we chat the more we find we have in common. It is super easy to be friends with this sweet lady. She is kind, thoughtful, encouraging and fun to be around.

Judy and her husband, John came for a visit this Saturday and I can’t tell you how much we enjoyed their company. Warm, engaging and so easy to know and like. Even our 17 year old grandson thoroughly enjoyed hanging out during their visit and they were most kind and interested in him.
We met in person once before this past October. John and I spent a couple days celebrating our anniversary near where Judy and John live. They warmly welcomed us into their beautiful home one evening for dinner and a delightful time. A BIG thank you from us for taking time from your busy lives to brighten our day! The time flew by way too quickly!

Judy shared a great make-ahead dessert idea along with the recipe on her blog. She got the recipe from her sister-in-law who got it from Taste of Home.
Coconut Cashew Crunch

Prep: 20 min. Bake: 50 min.
Ingredients
9 cups Rice Krispies
2 cups flaked coconut
1 can (8 ounces) salted cashew pieces
1 cup packed brown sugar
1/2 cup butter, cubed
1/2 cup light corn syrup
1 teaspoon vanilla extract
1/2 teaspoon baking soda
Directions
In a large bowl, combine the cereal, coconut and cashews.
In a large saucepan, combine the brown sugar, butter and corn syrup; bring to a boil over medium heat, stirring constantly. Cook and stir for 5 minutes. Remove from the heat; stir in vanilla and baking soda. Pour over cereal mixture; toss to coat.
Transfer to two foil-lined 15-in. x 10-in. x 1-in. baking pans. Bake at 250° for 50-60 minutes or until golden brown, stirring every 15 minutes. Cool completely in pan on a wire rack. Serve as is or use as a topping for ice cream, fruit or yogurt. Store in airtight
containers. Yield: 3 quarts.
