What would St Patrick’s Day be without a traditional loaf of Irish Soda bread. And today is a good reason to bake up a loaf even if you aren’t Irish. It is just perfect with a cup of tea and yet hearty enough to serve along side a meaty entrée.

An advantage of quick breads is their ability to be prepared quickly, without requiring the time and temperature control needed for traditional yeast breads.
How to make Irish Soda Bread
In a large mixing bowl, combine flour (reserving the extra), sugar, baking powder and soda, salt, raisins and caraway seeds.
Whisk well to thoroughly mix the dry ingredients.
In a smaller bowl, blend together the eggs, buttermilk and sour cream. You will want to use a bigger bowl than I did 😉
Blended wet ingredients.
Add the wet mixture to the dry and stir just until blended.
Heavens, I almost forgot to add the raisins!
Stir just until all dry ingredients are moistened being careful not to over mix.
Spoon batter into the prepared pan. Dust with the remaining flour.
Dip a knife in flour and make an X mark into the top. Batter will be sticky.

Below is a beautiful version of a popular hymn sung by Michael Ball
Naught be all else to me, save that Thou art.
Thou my best Thought, by day or by night,
Waking or sleeping, Thy presence my light.
Be Thou my Wisdom, and Thou my true Word;
I ever with Thee and Thou with me, Lord;
Thou my great Father, I Thy true son;
Thou in me dwelling, and I with Thee one.
Be Thou my battle Shield, Sword for the fight;
Be Thou my Dignity, Thou my Delight;
Thou my soul’s Shelter, Thou my high Tower:
Raise Thou me heavenward, O Power of my power.
Riches I heed not, nor man’s empty praise,
Thou mine Inheritance, now and always:
Thou and Thou only, first in my heart,
High King of Heaven, my Treasure Thou art.
High King of Heaven, my victory won,
May I reach Heaven’s joys, O bright Heaven’s Sun!
Heart of my own heart, whatever befall,
Still be my Vision, O Ruler of all.
Be Thou My Vision hymn

Thanks for the history behind that hymn. I find the words of the old hymns so thought-provoking, which is unfortunately something often missing from modern choruses. I think it’s really important to worship using a variety of styles of music, otherwise we become all heart and no head, or the other way round!

That hymn is most favorite. Nice to hear a little of the history behind it and it’s Irish heritage.
