I love sweet potatoes just about any way they can be made. Candied sweet potatoes are always a highlight at the Thanksgiving table. I think a sweet potato simply baked in its jacket until the sugars ooze out of the cuts then topped with butter, brown sugar, salt and pepper is very close to perfect. But I really like Orange Whipped Sweet Potatoes for its orange flavor.
Orange Whipped Sweet Potatoes Recipe
adapted from Taste of Home 2002 Book
- 3 pounds sweet potatoes, scrubbed
- 1/3 to 2/3 cups orange juice
- 1/4 cup packed brown sugar
- 2 tablespoons butter
- 1/2 teaspoon salt (may need more)
- pepper (I like lots)
- 1/4 teaspoon ground nutmeg
- Fresh parsley (optional)
DIRECTIONS:
Bake scrubbed sweet potatoes in 400 degree oven for about 45 minutes until soft. Scoop out of skins when cool enough to handle.
In large mixing bowl, mash the sweet potatoes with the brown sugar, butter, salt, pepper and nutmeg, adding orange juice until until fluffy and desired consistency.
Sprinkle with snipped parsley.

I can almost taste it! It sounds wonderful! I have three family members with special dietary situations – they can't have some of the things traditionally in recipes for sweet potatoes so we always bake them. I love them baked but would love to try this recipe.
