Sweet, chewy, and naturally flavored, these homemade strawberry fruit roll-ups are a fun and simple way to make a wholesome snack right in your own kitchen. While a dehydrator is the traditional tool for perfectly dried fruit leather, you can also use your oven on its lowest setting for a similar result. With just blended fruit and a bit of honey, this recipe is free from preservatives and full of flavor, a delicious treat for both kids and grown-ups.

Ingredients You’ll Need

  • 3 cups chopped strawberries
  • 1 teaspoon lemon juice (to preserve color and brighten flavor)
  • 1 Tablespoon honey (optional)

Instructions

Preparing the Fruit

Wash, dry, trim and chop the strawberries.

Add the strawberries, honey and juice to the blender, Cover and pulse/blend until you have a smooth puree. If needed, stop the blender and smash the fruit to the bottom using a wooden spoon before proceeding.

 

Spread the mixture

Lightly spray the dehydrator disk with PAM and wipe away any extra.

Pour the puree onto the disk.

Place the disk onto the dehydrator; dry at 135 degrees until fruit feels leather-like and is pliable (4-8 hours). Leather is not dry if there are any sticky or soft places. Our leather took 6 hours.

Cool and cut

Remove from dehydrator and roll in plastic wrap or parchment paper.  Cut into strips.

Store in a moisture/airtight container.

 

Oven-Baked Fruit Roll-Ups Method

If you don’t have a dehydrator, you can still make delicious homemade fruit roll‑ups in your oven using your lowest heat setting. Just follow these tips:

Equipment and Setup

  • Line a rimmed baking sheet with parchment paper or a silicone baking mat
  • Preheat oven to its lowest setting, ideally between 135°F and 150°F. If the oven only goes down to 170°F, prop the door open slightly with a wooden spoon to let moisture escape

Spreading the Puree

  • Spread the blended fruit in a thin, even layer about 1/8 inch thick
  • Keep the edges slightly thicker to prevent cracking
  • Use an offset spatula to smooth the surface

Baking and Drying Time

  • Bake for 4 to 8 hours, depending on oven temperature and puree thickness
  • At 140–145°F, drying usually takes 6 to 8 hours; at 150–170°F, it may take 3 to 5 hours
  • It’s ready when the surface is dry, not sticky, and the fruit leather peels off easily

Finishing and Storage

  • Let cool completely
  • Cut into strips and roll in parchment or wax paper
  • Store in an airtight container at room temperature for up to 1 week, or refrigerate for longer freshness

Tips for Success

  • Spread evenly – An even layer dries more consistently and prevents brittle edges
  • Rotate trays – If using an oven, rotate trays partway through to ensure even drying
  • Use ripe fruit – Riper fruit is naturally sweeter and blends more smoothly
  • Avoid wax paper – It sticks to the puree during drying; use parchment or silicone mats
