A Holiday Favorite Worth Returning To

Year after year, this casserole proves why it’s a must-have side dish. It comes together quickly, bakes up golden and tender, and pairs beautifully with nearly any main course. Even better, it can be made ahead and reheated, keeping holiday prep simple and stress-free.

Why You’ll Love This Corn Casserole

  • Creamy, lightly sweet, and full of corn flavor
  • Simple ingredients and minimal prep time
  • Perfect for Thanksgiving, Christmas, or any family meal
  • Easy to make ahead and reheat
  • Always a crowd-pleaser

Tips for Best Results

  1. Use an 8×8-inch or similar-size baking dish so the center cooks evenly.
  2. Bake until the top is golden and the center is set; avoid overbaking for the best texture.
  3. Let it rest a few minutes before serving to help it firm up slightly.
  4. Reheat covered with foil in a 325°F oven for about 15–20 minutes.

Optional Flavor Variations

This classic recipe is delicious as written, but small tweaks can make it your own:

  • Add ¼ cup melted butter for a richer flavor
  • Stir in ½ teaspoon salt to balance the sweetness
  • Reduce sugar to ¼ cup for a less sweet version
  • Add 1 cup shredded cheddar for a cheesy twist
  • Stir in 2 tablespoons chopped green chiles for mild heat
  • Add ¼ cup finely sliced green onions for a light, savory note and touch of color

Serving Suggestions

Serve warm with turkey, ham, or roasted chicken. It pairs perfectly with mashed potatoes, green beans, stuffing, and cranberry sauce for a comforting, well-rounded holiday meal.

Equipment

  • Preheat oven to 350°F. Grease an 8x8-inch baking dish.

Ingredients

  • 1 box Jiffy Corn Muffin mix
  • 1 egg
  • 1/3 cup milk
  • 1/3 to 1/2 cup sugar
  • 1 8-ounce container sour cream
  • 1 can whole kernel corn drained
  • 1 can creamed corn

Instructions

  • Preheat oven to 350°F. Grease an 8x8-inch baking dish.
  • In a large bowl, combine corn muffin mix, egg, and milk.
  • Stir in sugar, sour cream, and both cans of corn until blended.
  • Pour into the prepared dish.
  • Bake for 55–65 minutes, or until the center is set and the top is lightly golden.
  • Let cool a few minutes before serving warm.
  • Note: Baking times may vary depending on dish type. Ceramic or glass dishes may require slightly longer baking than metal pans.
  • Quick guide to judge doneness:
  • Jiffy Corn Casserole is Ready to Come Out When
  • The top is lightly golden brown.
  • The edges are set and pull away slightly from the sides.
  • The center jiggles softly when you move the dish but doesn’t look liquid.
  • A toothpick inserted near the center has a few moist crumbs (not wet batter).
  • After Baking
  • Let it rest at least 10–15 minutes before serving. The residual heat in the dish will firm the center just enough while keeping the texture creamy.
  • If you bake until the toothpick comes out completely clean, the casserole will likely turn dry rather than custardy.

Notes

Make-Ahead Tip:
Bake as directed, cool completely, then cover and refrigerate. Reheat covered with foil at 325°F for 15–20 minutes before serving.
