What are Ranger Cookies
Where the name Ranger cookies came from is not clear. I’m not sure they have anything to do with rangers although they would be great to snack on while roving through forests. These golden brown cookies are crispy and delicious and have been around for years. A tasty blend of oats, brown sugar, coconut and cereal make them a favorite with kids. Especially nice as an after-school treat with a tall glass of milk.
Ranger Cookies Recipe
1/2 cup butter
1/2 cup sugar
1/2 cup packed brown sugar
1/2 teaspoon vanilla extract
1 cup flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 cup quick-cooking oats
1 cup Wheaties cereal
1/2 cup coconut
Preheat oven to 375 degrees
With mixer, cream butter and sugars until light and fluffy. Beat in egg and vanilla.
Combine the flour, baking soda, baking powder and salt; add to creamed mixture and mix well. Stir in the oats, cereal and coconut.
Drop by spoonfuls 2 in. apart onto ungreased baking sheets.
Bake 10-12 minutes or until golden brown. Remove to wire racks to cool.
- Sometimes I toss in a small handful of chocolate chips, maybe 1/4 cup.
- I substituted Raisin Bran Crunch for the Wheaties this time and it was great.
